SPAGHETTI WITH WHITE CLAM SAUCE

Ingredients

  • 1/4-cup extra-virgin olive oil
  • 2 or 3 large cloves garlic, finely chopped
  • 1/2 lb. spaghetti or linguine
  • 1 (6 1/2 oz.) cans clams (3/4 cup)
  • 3 Tbsp fresh parsley, chopped
  • Freshly ground black pepper or hot red pepper flakes (or both)

Directions

  1. In a small saucepan, combine the olive oil and garlic over medium heat.
  2. Let sizzle gently while cooking the spaghetti in boiling salted water.
  3. Be careful not to over-brown or burn the garlic.
  4. When the spaghettis are a few minutes from being done, and the garlic is nutty brown, drain clam juice into the saucepan.
  5. Add the parsley and season with pepper and bring to a simmer.
  6. Add the clams and let heat through while draining the spaghetti.
  7. In a warm serving bowl, toss spaghetti with sauce and serve.
