Spanish Chorizo Chicken

Ingredients

  • 30 oz chicken breast
  • 2 oz Spanish chorizo, cut into small bites
  • 2 oz olive oil
  • 2 onions chopped
  • 2 red peppers sliced
  • 5 cloves garlic
  • 1 cup basmati rice
  • 3 cups chicken stock

Directions

  1. Cook chorizo with olive oil on med heat until fat released, set chorizo aside
  2. Season chicken breast and cook 5-6 minutes each side, set aside
  3. Cook onion, red peppers, garlic until soft
  4. Add rice, stir to coat
  5. Add chicken stock, stir
  6. Add back chorizo and chicken breast, cover and cook for 20-25 minutes stirring every 5-10 minutes
