Spiced Herb, Cheese And Filo Swirl Tart

Ingredients

  • tbsp olive oil
  • 5 eschalots (French shallots), peeled, halved lengthways and sliced
  • ½ tbsp coriander seeds, toasted and roughly crushed
  • ½ tbsp cumin seeds, toasted and roughly crushed
  • 6-8 sheets filo (with a couple extra up your sleeve in case you tear them)
  • 75g butter, melted and cooled
  • ½ cup Persian-style feta
  • ½ cup parmesan, finely grated
  • 200g cream
  • 4 eggs
