Spiced Lamb and Turmeric Rice

Ingredients

  • 250g (9 oz) natural yogurt
  • 15 g (1 tbsp) garlic, minced
  • 15 g (1 tbsp) ginger, minced
  • 1½ tsp ground cumin
  • 1 ½ tsp ground coriander
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 400 g (14 oz) diced lamb, fat trimmed
  • 2 tbsp olive oil
  • 100 g (4 oz) onions, finely sliced
  • 200g (8 oz) basmati rice, uncooked weight
  • ½ tsp tumeric
  • 1 cinnamon stick
  • 600 ml (2 1/2 cups) water
  • 1 tsp salt
  • 20g (1 tbsp) pomegranate seeds, to serve (optional)
  • handful of coriander leaves, to serve
