Spicy Lamb Skewers
Ingredients
- 500gms lamb fillets
- 1 tbsp grated lemon rind
- 2 tbsps fresh lemon juice
- 1 1/2 tbsps grated peeled fresh ginger
- 2 tsp paprika
- 1 1/2 tsp salt
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp freshly ground black pepper
- 2 tsp chopped rosemary or mint
- 2 tbsp red wine vinegar
- 1 tsp olive oil
Directions
Cut lamb into 2 cm pieces. Mix all the ingredients and pour the mixture onto the lamb in a dish.
Cover and refrigerate for 3 hours. Soak 8 bamboo skewers in water for an hour and thread the lamb onto the skewers.
Cook skewers on a heated oiled grill, brushing with the extra marinade mix till cooked.
