Spicy peanut Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 sweet potato, peeled and cubed
  • 1 red bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1/3 cup creamy peanut butter
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 2 cups chopped kale
  • 1/4 cup chopped cilantro, for garnish
  • Roasted peanuts, for garnish

Directions

  1. In a large pot, heat olive oil over medium heat. Add onion, garlic, and ginger, sautéing until onion is translucent, about 5 minutes.
  2. Add sweet potato and red bell pepper, cooking for another 5 minutes.
  3. Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 15 minutes.
  4. Stir in peanut butter, chili powder, cayenne pepper, salt, and pepper until well combined.
  5. Add kale and cook until wilted, about 5 minutes.
  6. Serve hot, garnished with cilantro and roasted peanuts.
