Spicy Sesame Noodles With Chicken (6)

Ingredients

  • 8oz dry wheat spaghetti, broken in half
  • 1 garlic clove, minced
  • 1 c fresh snow peas
  • 1 TBSP grated fresh ginger
  • 3 TBSP Rice wine vinegar
  • 3 TBSP reduced sodium soy sauce
  • 1 TBSP canola oil
  • 1 TBSP water
  • 1 TBSP sesame oil
  • 2.5 TSP sriracha (Thai hot sauce) - if you don't like heat, cut back on this measurement.
  • 2 TSP honey
  • 1 c chopped, cooked chicken breast
  • 1 c diced scallions

Directions

  1. Boil salted water in a large pot and cook spaghetti according to directions.
  2. While the spaghetti goes in, mist a skillet with cooking spray and add the minced garlic and snow peas over a medium heat. Stir occasionally. You want the garlic to be fragrant and the snow peas to get a little soft, but still firm that they hold a crunch.
  3. Combine the ginger, vinegar, soy sauce, canola oil, water, sesame oil, sriracha and honey in a small bowl. Stir to combine.
  4. When the spaghetti is cooked, drain and return to the pot. Add the chopped chicken and snow peas/garlic. Pour the sauce over the pasta and stir until coated. Add scallions and stir.
