Boil salted water in a large pot and cook spaghetti according to directions.
While the spaghetti goes in, mist a skillet with cooking spray and add the minced garlic and snow peas over a medium heat. Stir occasionally. You want the garlic to be fragrant and the snow peas to get a little soft, but still firm that they hold a crunch.
Combine the ginger, vinegar, soy sauce, canola oil, water, sesame oil, sriracha and honey in a small bowl. Stir to combine.
When the spaghetti is cooked, drain and return to the pot. Add the chopped chicken and snow peas/garlic. Pour the sauce over the pasta and stir until coated. Add scallions and stir.
