Spinach & Feta Egg Muffins

Ingredients

  • 6 large eggs
  • 30g fresh spinach, chopped
  • 75g crumbled feta cheese
  • 30g diced red bell pepper
  • 1/4 tsp garlic powder
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375F. Grease a standard muffin tin with a little oil or non-stick spray.
  2. In a large bowl, whisk together the eggs, garlic powder, salt and pepper. Stir in chopped spinach,feta cheese and diced bell pepper.
  3. Pour the mixture evenly into 8 muffin cups. Bake for 14-16 minutes, until the centres are set. Let cool slightly before removing from the tin. Serve warm.
  4. Serving size: 2 muffins
