Squash Patties

Ingredients

  • Yellow Squash (2 cups)
  • Onion (1 cup)
  • 1 Egg Beaten
  • Tsp Salt
  • Tsp Pepper
  • 1/2 cup and 1 Tbsp Flour
  • Oil

Directions

Shred squash and onions in food processor. Mix with egg, salt and pepper.
Stir in flour and drop 1 Tbsp of mixture at a time into hot oil and flatten out. Fry each side 3 minutes or until golden brown.
