Sticky Date Pudding

Ingredients

  • 170g dates, stoned and chopped
  • 1 teaspoon bicarb soda
  • 300ml boiling water
  • 60g butter
  • ¾ cup brown sugar
  • 2 eggs
  • 170g self raising flour
  • ½ teaspoon vanilla
  • Sauce
  • 200g brown sugar
  • ½ cup cream
  • 125g butter
  • ½ teaspoon vanilla

Directions

  1. Preheat oven to 180. Grease a cake tin (or individual moulds or muffin tins). Mix dates and bi carb soda. Pour over water and leave to stand.
  2. Cream butter and sugar, then add eggs one at a time beating well after each. Fold flour in gently then stir in date mixture and vanilla and pour into tin.
  3. Bake for 30-40 mins (20 for individual serves) until cooked when tested with a skewer.
  4. To make sauce, bring all ingredients to a boil. Reduce heat and simmer for 5 mins.

Options:

  1. Add 2 mashed bananas to mixture and bake for a little longer.
  2. Or
  3. Add 100g chopped bittersweet chocolate before baking.
