Sticky Orange Chicken Tray-bake - Poppy Cooks

Ingredients

• 2 skin on, bone in chicken thighs
• 2 skin on, bone in chicken drumsticks
• 1 tbsp vegetable oil
• Pinch of salt and pepper
• 1 pack of tender stem broccoli
• 1 pack of sugar snap peas
• For the Glaze
• Zest and juice of 1 orange
• 4 tbsp runny honey
• 2 tbsp dark soy sauce
• 2 tbsp chilli sauce (or more, or less depending on your taste)
• 2 tbsp rice vinegar
• 1 tbsp garlic (or 2 minced cloves of garlic)
• 1 tbsp ginger paste (or 1cm knob of minced ginger)
• To Finish
• 2 chopped spring onions
• 1 sliced red chilli
• 1 small handful of chopped coriander
• 1 small handful of cashew nuts
• Cooked rice
