In a bowl combine all dry ingredients and diced butter. Rub mixture briskly between finger tips until it forms moist clumps in a loose sandy mixture. Refrigerate.
Cut layer off of bottom off each apple to make a flat bottom. Core apples with an apple corer. Pack the bottom of each apple with the dry mixture. Place in baking dish. Sprinkle with cinnamon and brown sugar inside the apples. Put honey inside the apples. Spoon (pack) the mixture into the apples, let it overflow. Put remaining mix over the apples and honey.
Bake at 350 degrees for 40 minutes. Filling will be golden brown and if theres little or no resistance when knife is inserted in side of apples. If skins are shriveled then they are overcooked.
