Stuffed boneless chicken breast

Ingredients

  • 5 or 6 large boneless chicken breast
  • sliced ham
  • Olive oil
  • Seasoning of choice
  • twine and needle for stitching
  • cheese (Colby, pepper jack, cheddar, swiss)
  • cream cheese
  • spinach
  • mushrooms
  • Peppers (jalapeno or bell)
  • corn
  • use your imagination

Directions

Remove excess fat from chicken. Cut thru top of breast shy of cutting thru the bottom. Cut a horizontal slice halfway down vertical slice on both sides stopping shy of cutting thru the sides. Place cheese in horizontal slices Wrap cheese or other combination of ingredients in sliced ham. Stuff into vertical slice. Stitch top closed. Bake at 350 for 45 minutes or until internal temperature of thickest chicken reaches 170-180 degrees.

I like to mix spinach, corn and cream cheese together and roll it up in ham. Or just stuff the chicken with this mixture, with or without cheese. Add peppers, mushrooms or whatever else you like into the opening.

Also, I like to season the inside of the chicken when stuffing and the outside of the chicken. Olive oil is sprinkled inside and out of chicken also for added flavor and moisture.
