Stuffed potato cakes

Ingredients

  • 3-4 cups leftover mashed potato
  • 1/2 cup plain flour
  • 1/2 cup leftover bolognaise
  • 1/2 cup grated tasty cheese
  • 2 tbsp olive oil

Directions

  1. Mix mashed potato with plain flour.
  2. Combine cold bolognese with grated cheese.
  3. Working with half-cup quantities, place the potato in your palm and flatten it into a disc.
  4. Place approximately 2tbsp mince and cheese mixture in the centre, then fold over the potato to form a patty. It is very pliable so you can use extra potato to seal any gaps or holes.
  5. Smooth the potato and place it on a tray or plate. Continue until you have used all of the mixtures.
  6. Heat 1 tbsp oil in a large non-stick frypan over medium heat.
  7. Cook patties for 3-4 minutes on each side until golden, adding more oil if necessary.
  8. Keep warm in a low oven until all patties are cooked.
  9. Serve immediately while hot.
