Working with half-cup quantities, place the potato in your palm and flatten it into a disc.
Place approximately 2tbsp mince and cheese mixture in the centre, then fold over the potato to form a patty. It is very pliable so you can use extra potato to seal any gaps or holes.
Smooth the potato and place it on a tray or plate. Continue until you have used all of the mixtures.
Heat 1 tbsp oil in a large non-stick frypan over medium heat.
Cook patties for 3-4 minutes on each side until golden, adding more oil if necessary.
Keep warm in a low oven until all patties are cooked.
