  • bell peppers
  • ground beef
  • taco seasonings
  • 1 cup rice or cauliflower rice
  • 1 cup cheese for mixture + extra on top
  • diced tomatoes
  • green onion
  • cilantro

Directions

  1. Preheat oven to 375. Cook rice. Cook ground beef + add taco seasoning. Steam whole pitted peppers for 5 minutes. Mix together rice, meat, cheese, tomatoes, cilantro, green onion + scoop into peppers. Add cheese on top. Cook in oven for 20 minutes.
