Stuffed Zucchini Halves

Ingredients

  • 3/4 cup marinara sauce
  • 2 medium zucchini
  • Tsp oil
  • 1/4 onion diced
  • 2 garlic cloves, crushed
  • 1/4 cup diced red paper
  • 7 oz lean chicken or turkey sausage, remove casing
  • 1/4 cup part skim mozzarella
  • 4 tsp parmesan cheese

Directions

  1. Bring large pot to boil, Preheat oven to 400 degrees
  2. Cut zucchini in half lengthwise, leaving 1/4" thick scoop out the inside of zucchini, reserve flesh, chop and set aside. Drop zucchini in boiling water and cook 1 minute. Remove.
  3. Coat casserole dish with thin layer of sauce, place zucchini cut side up. Brown sausage breaking up, set aside. Add onion, garlic, red peppers cook 2 minutes , add chop zucchini, add salt and pepper and cook 2 minutes. Add sausage cook additional 2 minutes. Divide between zucchini halves, top each with 1 Tbs ice, 1/2 Tbs mozzarella and parmesan. cook 30 minutes or until cheese melted and heated through.
