Sugar-Free Chocolate & Coconut Banana Bread (6 Mini Loaves)

Ingredients

  • • 3 large ripe bananas
  • • 2 large eggs
  • • 1/3 cup melted coconut oil (72g)
  • • 1/3 cup unsweetened plant-based milk
  • • 1 tsp vanilla extract
  • • 1/3 cup artificial sweetener Nativa.
  • • 1 1/2 cups organic plain flour
  • • 1 tsp baking soda
  • • 1/2 tsp baking powder
  • • 1/2 tsp cinnamon (optional)
  • • 1/4 tsp salt
  • • 3/4 cup unsweetened shredded coconut (60g)
  • • 1/2 cup sugar-free dark chocolate chips (plus a few extra for topping)

Directions

  1. 1. Preheat oven to 170°C (fan-forced). Lightly grease your loaf molds.
  2. 2. In a large bowl, mash the bananas until smooth.
  3. 3. Add in eggs, oil, milk, vanilla, and sweetener. Mix well until combined.
  4. 4. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  5. 5. Gradually mix the dry ingredients into the wet, stirring until just combined.
  6. 6. Fold in the shredded coconut and chocolate chips.
  7. 7. Divide the batter evenly between your 6 loaf molds. Sprinkle a few extra chocolate chips on top if desired.
  8. 8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  9. 9. Cool in the molds for 10 minutes, then transfer to a wire rack to cool completely.
