Superseed Chicken Wrap

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1⁄4 cup sunflower seeds
  • 1⁄4 cup pumpkin seeds
  • 2 tablespoons sesame seeds
  • 1 teaspoon coriander powder
  • 1⁄2 teaspoon ground turmeric
  • 2 brown rice tortillas
  • 2 tablespoons avocado mayo
  • 12 slices cucumbers
  • 1 cup mixed greens

Directions

  1. Preheat the oven to 350 degrees.
  2. In a food processor place the
  3. sunflower, pumpkin and sesame
  4. seeds.
  5. Pulse until finely chopped. Mix in the coriander and turmeric.
  6. Pour onto a plate or flat surface.
  7. Slightly moisten the chicken breasts and dredge them into the seed mix, coating evenly.
  8. Place on a parchment lined baking sheet and bake for 20 to 25 minutes.
  9. Slice the chicken breasts and assemble the wrap by spreading 1 tablespoon of mayo down the center of each tortillas.
  10. Top with the mixed greens, cucumber slices and sliced chicken.
  11. Roll and enjoy!
