Ingredients

  • 1 x 200g tin of sweetcorn, drained
  • 1 medium egg
  • 3 tablespoons of plain flour
  • 1 knob of unsalted butter

Directions

  1. 1. Add the sweetcorn, egg and flour to a food processor or blender and whizz into a thick batter
  2. 2. In a frying pan, heat the butter over medium heat and then add 3 tablespoons of the mixture per fritter to the pan; you should fit 2 or 3 fritters into the pan, depending on its size
  3. 3. Cook each fritter for 2-3 minutes on each side
  4. 4. Once each fritter is cooked, transfer it onto a plate lined with kitchen paper to absorb any excess oil
  5. 5. Serve and enjoy once cooled.
