Sweet Mince Pies

Ingredients

  • Filling
  • 200g mixed fruit
  • 2T golden syrup
  • 1T finely chopped grated lemon rind
  • 1t mixed spice
  • 1/4c brandy
  • Pastry
  • 1/2c almond meal
  • 2 c plain flour
  • 1/2c caster sugar
  • 200g butter, chilled and diced
  • 1 egg & 1 Atwater, lightly beaten

Directions

  1. Preheat oven to 180°C
  2. Place filling ingredients in a saucepan over med heat. Simmer 5 min, stir occasionally. allow to cool
  3. Place almond meal, flour & sugar into a food processor and process until combined. Add butter and egg mix and process until a ball forms.
  4. Wrap and put in fridge for 30 min.
  5. Roll out pastry between 2 sheets of baking paper until 3mm thick.
  6. Use a 6cm round pastry cutter and line two 12 hole muffin pans.
  7. Fill with fruit mince
  8. Re roll remaining pastry to cut lids, cutting a small cross in the middle. Brush underside of lid lightly with water and press onto pie.
  9. Bake for 15 min or until golden.
  10. Cool.
  11. Dust with icing sugar.
