Sweet Potato, Caramelised Onion And Feta Quiche

Ingredients

  • Quiche pastry recipe - 250g plain flour, 125g cold butter, 2-3T cold water
  • 500g sweet potato, peeled, cut into 1cm cubes
  • 2T olive oil
  • 2 cloves garlic
  • 2-3T rosemary leaves
  • S & P
  • 125g feta, crumbled
  • 3/4 cup cream
  • 1/4 cup milk
  • 1/4c caramelised onion
  • 2 eggs, lightly beaten

Directions

  1. * Make pastry and line 2 quiche tins.
  2. 1. Preheat oven to 200°C
  3. 2. Place sweet potato in a large bag or bowl. Add rosemary, garlic and oil and toss. Season with S & P.
  4. 3. Spread on baking tray and cook for 30 minutes.
  5. 4. Set aside to cool.
  6. 5. Mix other ingredients with the sweet potato and divide evenly between the two cases.
  7. 6. Cook for 10 minutes at 200° and then 20 min at 180° or until set and golden.
