Sweet Potato Casserole

Ingredients

  • 4 large cans of sweet yams (the one with syrup)
  • 1 can evaporated milk
  • Cinnamon powder
  • 4 tsp. Maple syrup
  • Brown sugar
  • Mini marshmallows
  • Tbsp vanilla

Directions

  1. In a pot place the cans of yams with syrup to boil.
  2. When they start boiling reduce the heat to low.
  3. In the pot add 4 tsp maple syrup.
  4. I leave this in low heat about 2 hours making sure they have enough liquid and it doesn't stay without liquid this is very important.
  5. Once the yams are very soft you can let them sit until you are ready to mash them.
  6. I take the yams from the pot little at a time and start mashing them with a hand mixer.
  7. I add the evaporated milk just a little at a time for consistency you don't want them too soupy.
  8. Add a tbsp of vanilla.
  9. Once you achieve the desire consistency you place the mixture in a baking dish.
  10. I sprinkle a mixture of brown sugar and cinnamon on top
  11. Place marshmallow sprinkle more brown sugar and cinnamon on top of marshmallows and bake for half hour at 350 degree.
  12. Check it to make sure marshmallows don't burn.
