Preheat oven to 375 degrees
Heat a large sauté pan over medium heat. Add butter and let melt. Add the honey & salt and mix together. It will foam up.
Add the spices and mix again.
Add the sweet potatoes and toss.
Cook 7-10 minutes, tossing every few minutes.
When the liquid has cooked, place pan in oven for 30-40 minutes, until potato is tender and browned. Be sure to toss as they cook.
WHIPPED RICOTTA:
Add all ingredients and mix together.
While potatoes roast, spread ricotta mixture onto a plate.
When potatoes are done, add them on top of ricotta.
Top with Cilantro, honey and Pistachio
