Sweet & Sour Chicken

Ingredients

  • 500g chicken, cubed
  • 1 tin pineapple pieces
  • 1 small red capsicum, cut into 2.5cm squares
  • 1 small green capsicum, cut into 2.5cm squares
  • 1 small red onion, sliced into thin wedges
  • 150g sugar snap peas
  • 1T olive oil
  • Sauce -
  • 1/2c of pineapple juice
  • 1/2c tomato sauce
  • 2T white vinegar
  • 2T soy sauce
  • 2T sugar
  • 1T corn flour
  • 1T minced garlic OR 3 cloves fresh, grated
  • 1T minced ginger OR 15g fresh, grated

Directions

  1. 1. Combine sauce ingredients and set aside.
  2. 2. Heat half the oil in a wok and brown chicken (until almost cooked through).
  3. 3. Remove chicken.
  4. 4. Add removing oil and cook onion and capsicums for 5 minutes over high heat.
  5. 5. Return chicken, sauce, pineapple pieces and peas to wok and stir fry until chicken is cooked through.
  6. 6. Serve over rice.
