Taco Casserole

Ingredients

  • 1 lb. ground beef
  • 1 onion
  • 1 tsp. minced garlic
  • 1/2 tsp. pepper
  • 1 can kidney beans - drained
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can Rotels - undrained
  • 8 (6 inch) corn tortillas, cut in quarters
  • 16 oz. cheddar cheese shredded

Directions

  1. Cook ground beef, onion, garlic and pepper in large skillet. Drain and return to skillet.
  2. Stir in beans, soups and rotels.
  3. Layer half tortillas on bottom of dish - top with half of meat mixture and half cheese. Repeat layers.
  4. Cover tightly with foil and freeze for up to 2 months.
  5. To bake: defrost in fridge over night. Bake covered for 45 minutes then remove the lid for 30 more minutes.
