Taco Soup

Ingredients

  • 1 lb ground beef
  • 1 cup diced onion
  • 1 can pinto beans drained
  • 1 can black beans drained
  • 1 cup frozen corn
  • 1 can diced tomatoes with chiles (like rotel)
  • 1 can diced tomatoes
  • 1 can diced green chilies
  • 1 small can tomato sauce
  • 1/4 cup salsa verde
  • 1/4 cup taco seasoning
  • 1 dry ranch packet

Directions

  1. Cook ground beef and onions in a sauté pan until meat is cooked through.
  2. Drain the fat off the meat and transfer to a Dutch oven or crock pot.
  3. Add all the other ingredients and stir until combined.
  4. If cooking in a slow cooker, cover and cook on low for 6-8 hours.
  5. In a Dutch oven, bring to a boil on med high heat.
  6. Stir frequently.
  7. Once it comes to a boil, lower the temperature and let the soup simmer for 30 minutes, stirring every five minutes.
  8. Serve with grated cheddar cheese, sour cream, and tortilla chips.
