Tacos: Steak Tacos

Ingredients

• STEAK RUB:
• 1 and 1/2 up to 2 pounds flank steak (or flat iron or skirt steak)
• 1 teaspoon EACH: garlic powder, ground coriander, ground cumin
• 1 tablespoon EACH: paprika, ground chili powder, tightly packed light brown sugar
• 1 and 1/2 teaspoons EACH: fine sea salt and pepper
• 2 tablespoons olive oil, divided
• TOPPING:
• Corn: Use 2 cups canned or frozen. If using fresh use 2 large corn on the cob
• 3 large avocado, diced
• 3 green onions, thinly sliced
• 1/2 bunch cilantro, finely chopped
• 1 tablespoon finely chopped jalapeño (optional) or 1 red & 1 green pepper thinly sliced
• 1 teaspoon minced garlic
• 1 large lime (1 teaspoon zest, 2 tablespoons juice)
• TORTILLAS:
• 12 small (or street-sized) Tortillas (flour or corn)
• Cotija or Queso Fresco Cheese, additional lime wedges/juice and cilantro for garnish.
• SAUCE:
• 1/2 cup full-fat regular mayo
• 3 tablespoons freshly squeezed lime juice +1/2 teaspoon lime zest
• 1/8 teaspoon ground cumin
• 1/4 teaspoon paprika
• 1/2 teaspoon chili powder
• 1 teaspoon Sriracha sauce (optional)
