Tahini Tray Dinner

Ingredients

  • 1 cup chickpeas, drained
  • 1/2 cup chopped broccoli
  • 1/4 sweet potato, chopped into bite-sized pieces
  • 1 1/2 cloves garlic, diced
  • 1 Tbsp tahini
  • 1/2 tsp olive oil
  • 1/4 tsp cumin
  • Pinch of salt
  • Pinch of red pepper flakes at the end
  • 2 Tbsp fresh parsley, tossed at the end
  • 1/4 lemon, squeezed
  • Optional: 6 oz lean protein

Directions

  1. Preheat oven to 375 degrees.
  2. In a bowl, combine all ingredients except for red pepper flakes, parsley and lemon. Toss to combine. Put on a cookie sheet and bake for 25 minutes.
  3. Put cooked veggies on a plate and add parsley, a pinch of crushed red pepper, and a squeeze of lemon. Serve with lean protein, if desired.
