Tara’s Huevos Rancheros

Ingredients

  • 2 (28 oz) cans diced tomatoes
  • 1 tbsp packed brown sugar
  • 1 tbsp lime juice
  • 1 onion, chopped
  • 1/2 cup canned chopped green chilies
  • 1/4 cup olive oil
  • 1 tbsp chili powder
  • 4 garlic cloves, sliced thin
  • 4 oz Jack cheese, shredded
  • 8 large eggs
  • 1 avocado, halved, then diced
  • 3 scallions, sliced thin
  • 1/3 cup cilantro, minced
  • 8 corn tortillas, warmed

Directions

  1. Adjust rack to middle position and heat oven to 500 degrees
  2. Line rimmed baking sheet with parchment paper
  3. Fran tomatoes in fine mesh strainer over a bowl (reserve 1 3/4 cups juice)
  4. Whisk sugar and lime juice into reserved tomato juice
  5. In separate bowl, combine onion, chilies, oil, tomatoes chili powder, garlic, 1/2 tsp salt..
  6. Transfer to baking sheet. Spread in even layer, roast 35-40 minutes (stirring 1/2 way thru)
  7. Reduce oven temp to 400 degrees
  8. Transfer roasted tomato mixture to a 13 x 9 inch baking dish. Stir in tomato juice mixture, season with salt and pepper
  9. Sprinkle cheese over tomato mixture
  10. Using a spoon, hollow out 8 holes in tomato mixture in 2 rows
  11. Crack 1 egg in each hole, season with salt and pepper
  12. Bake 13-16 minutes
  13. Transfer dish to wire rack, tent loosely with foil, let sit for 5 minutes
  14. Spoon avocado over top then sprinkle with scallions and cilantro
  15. Serve with warm tortillas
