Tara’s Salt Potatoes

Ingredients

  • 8 cups water
  • 14 oz salt (Morton or diamond crystal kosher salt)
  • 3 lbs small red potatoes
  • 8 tbsp unsalted butter (cut into 8 pieces)
  • 2 tbsp minced fresh chives
  • 1 tsp pepper

Directions

  1. Set wire rack in rimmed baking sheet
  2. Bring water to a boil in a Dutch oven over medium high heat.
  3. Stir in salt and potatoes and cook 20-30 minutes.
  4. Transfer to prepared baking sheet and let dry until salty crust forms (about 1 minute)
  5. While drying, microwave butter, chives and pepper in a medium bowl until butter is melted (about 1 minute)
  6. Serve hot, pass butter separately
