Thai Chicken Balls/Rissoles/Sausage Rolls
Ingredients
- 500g chicken mince
- 1 1/2c fresh breadcrumbs
- 1c chopped corriander (1/“2 bunch)
- 1t corriander powder
- 3t brown sugar
- 1T fish oil
- 1T lemon or lime juice
- 3T sweet chilli sauce
- 1/2c chopped roasted peanuts
- 3 chopped spring onions
- 1T red curry paste
- 3 kafir lime leaves (optional), very finely chopped
Directions
Mix together brown sugar and fish oil. Dissolve sugar. Combine everything together and mix well. Form into evenly shaped balls and refrigerate for 1/2h. Shallow fry in oil until cooked - about 5 minutes. Larger ones take about 10-15min.
