Thai Lettuce Wraps

Ingredients

  • 4 cups skinless cooked chicken, chopped
  • 1.5 cups cilantro, chopped
  • 1.5 cups basil, chopped
  • 1/2 cup mint, chopped
  • 1/2 cup green onion, finely chopped
  • Thai sweet chili sauce (Mae Ploy brand is good)
  • Hearts of Romain lettuce leaves
  • Wedges of lime
  • 1/2 peanuts, finely chopped
  • Siracha Sauce(Huy Fong Foods- chicken pic on front of bottle)

Directions

  1. Mix together chicken, cilantro, basil, mint, green onion with a small amount of chili sauce to moisten and bind.
  2. Spoon mixture into leaves, sprinkle with peanuts, lime and siracha sauce
