The Best Ever Homemade Carrot Cake with Cream Cheese Frosting
Ingredients
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 1/4 cup vegetable oil
- 4 large eggs
- 1 tablespoon vanilla
- 1 tablespoon ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 cups all purpose flour
- 2 3/4 cups grated carrots, approximately 5
- 1 (8 ounce) can crushed pineapple, drained
- 3/4 cup chopped walnuts
- 1/2 cup raisins (regular or golden)
- 1 cup sweetened flaked coconut
- Frosting
- 1 (8 ounce) block cream cheese, room temperature
- 1/2 cup butter, room temperature
- 5 cups powdered sugar
- optional – 1 teaspoon vanilla extract OR 1/2 teaspoon almond extract
- note: if making a 3 layer cake you will need to increase these amounts by 50%
