Thick Lentil & Carrot Soup

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped finely
  • 2 carrots, chopped finely
  • 1 garlic, peeled and chopped
  • 200g red lentils, rinsed
  • 1.1 litre (2 pints) veg stock pots

Directions

  1. Heat oil. Add onion, carrots and garlic.
  2. Sweat for 5 then add lentils and stock.
  3. Bring to boil, cover and simmer for 30mins.
  4. Purée in food processor.
