Ingredients

  • 2 cups tomatoes
  • 1 cup mozzarella
  • 3 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 lemon

Directions

  1. Cut the tomatoes and mozzarella into bite size pieces and put aside.
  2. In a small bowl, whisk together the zest and juice of the lemon, the olive oil and the oregano. Season to taste with salt, pepper and sweetener.
  3. Toss the tomatoes, mozzarella and dressing together.
