Tomato Soup

Ingredients

  • 6 tomatoes
  • 1 red bell pepper
  • 1 onion
  • 2 celery sticks
  • 2 carrot sticks
  • 8 garlic cloves
  • Olive oil
  • Salt
  • Pepper
  • Thyme
  • 1/2 cup raw cashews
  • Handful of basil

Directions

  1. Cut up 6 tomatoes, red bell pepper, onion, carrots & celery.
  2. Add everything to a baking tray with garlic, olive oil, salt, pepper & thyme.
  3. Bake at 400 degrees for 45 minutes.
  4. Blend 1/2 cup cashews into a powder.
  5. Add the roasted veggies to a blender with the blended cashews, cooked garlic cloves & and handful of basil.
  6. Pour it into a pot & add salt to taste (about 1/2 tsp salt).
  7. Add broth if you like it runnier.
