Tortellini And Vegetable Soup

Ingredients

  • 2 tbs evoo
  • 2 carrots halved lengthwise thinly sliced
  • 2 celery stalks halved lengthwise thinly slice
  • 2 zucchini halved lengthwise thinly sliced
  • Salt&pepper
  • 6 cups chicken broth
  • 1 lb fresh cheese tortellini
  • 2 plum tomatoes chopped
  • 1/4 cup chopped parsley
  • 1/4 cup grated parmigiana-reggiano cheese

Directions

  1. Sauté vegetables in warmed pot and evoo about 5 minutes till soft. Season with salt&pepper. Stir in broth and bring to boil
  2. Add tortellini and cook 5 minutes. Remove from heat and stir in tomatoes and parsley then season with salt&pepper.
  3. Ladle soup into warmed bowls, drizzle with evoo, sprinkle cheese and serve
