Tray Bake Portuguese Chicken And Rice

Ingredients

  • 1 1/2 cup medium grain rice
  • 1 1/2 tablespoons Portuguese spice
  • 2 tbs brown sugar
  • 1 lemon and rind grated and juiced
  • 4 Maryland fillets
  • 1 brown onion
  • 2 garlic cloves
  • 1 red capsicum
  • 2 fresh corn cobs diced
  • 400 g tin tomatoes diced
  • 1 cup chicken stock
  • 1/4 cup parsley

Directions

  1. Preheat oven to 200d
  2. Combine spice mix, sugar, lemon juice and rind in a large bowel, add chicken and coat.
  3. Heat pan to high, add chicken and brown. Remove chicken to a plate.
  4. Add onion, garlic to pan and cook until soft. Then add capsicum, corn, tomatoes, and rice and stock then bring to boil.
  5. Pour rice mix into oven proof dish. Top with chicken pressing it down into the mix. Bake with foil for 20 mins. Then remove foil and bake for a further 20 mins.
  6. Scatter with parsley. Serve
