Tuna & Chickpea Salad

Ingredients

  • 90 grams canned tuna in water
  • 150 grams chickpeas
  • 1 red bell pepper
  • 70 grams corn
  • 1/3 baby cups spinach
  • 100 grams feta cheese, crumbled
  • 1 tablespoon olive oil

Directions

  1. Drain the water out of the tuna.
  2. Cut the bell peppers into slices and add all the ingredients into a bowl.
  3. Drizzle with olive oil, and season with salt and pepper.
  4. Add optional herbs and some lemon zest for extra flavour.
  5. If you are food prepping, be sure to leave the cheese and spinach on the side.
