Turkey Breast: Smoked With Gravy

Ingredients

  • 9 lb turkey
  • ½ tsp kosher salt per pound of meat unless the turkey has been brined or is self-basting
  • Olive oil spray
  • 4 tbsp rub Depending on the size of the bird you may need more or less
  • 4 leaves fresh sage
  • BUTTER INJECTION:
  • 3 tbsp butter
  • 1 tbsp lemon juice
  • ½ cup chicken broth
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • ½ tsp salt
  • TIRKEY BASTE:
  • 3 tbsp butter
  • 3 cloves garlic slightly crushed
  • 1 hand full fresh thyme, rosemary & sage leaves
  • RUB:
  • 1 tbsp dried parsley
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tbsp dried crushed bay leaf
  • 1 tbsp black pepper freshly ground
  • 1 tbsp sugar
  • 2-4 tbsp olive oil
  • GRAVY:
  • 1 quart chicken broth
  • 1 cup apple juice
  • 2 onions skin on, cut into chunks
  • 2 ribs celery cut into 2 inch pieces
  • 1 tbsp dried thyme
  • 2 dried bay leaves
