Turkey meatballs

Ingredients

  • 3 tbsp. Olive oil
  • 2 oz. Pancetta, finely diced
  • 1/2 yellow onion, finely diced
  • 1 lb. Ground turkey
  • 1/4 c. Fresh flat leaf parsley
  • 1/4 c. Bread crumbs
  • 1/4 c. Sun-dried tomatoes, chopped
  • 2 eggs, lightly beaten
  • 3/4 tsp. Salt
  • 3/4 tsp. Pepper

Directions

  1. 1. Pre-heat oven to 450F.
  2. 2. Heat the olive oil in a medium skillet.
  3. 3. Add the pancetta and cook for 2 minutes.
  4. 4. Add the onion and continue to cook until the pancetta is crisp and onion is tender, about 4 minutes more.
  5. 5. Remove from heat and let it cool.
  6. 6. In a large bowl, combine the pancetta-onion mixture and the remaining ingredients and stir to combine.
  7. 7. Form into meatballs and place on a foil lined, greased baking sheet.
  8. 8. Bake for 20-25 minutes.
