Turkish Tomato Salad

Ingredients

  • ▢ 4 - 6 roma tomatoes chopped
  • ▢ 1 green pepper diced
  • ▢ 1 white onion diced or red
  • ▢ 6 small cucumbers (cukes)
  • ▢ ¾ cup walnuts chopped
  • ▢ 1 cup parsley chopped
  • ▢ ¼ cup olive oil extra virgin (1/8c)
  • ▢ 4 tablespoon pomegranate molasses (2T)
  • ▢ 1 teaspoon sumac (1/2t)
  • ▢ ½ teaspoon salt (pinch)

Directions

  1. Place the chopped tomatoes, green pepper, onion, cucumbers, walnuts and parsley in a large bowl and mix well.
  2. Mix olive oil, pomegranate molasses, sumac and salt in a small bowl and pour it over the salad.
  3. Mix well and cover the salad with a plastic wrap. Refrigerate for 30 minutes before serving.
