Tuscan Bread Salad

Ingredients
- Cooking oil spray
- 12 slices crusty Italian bread
- 1/2 teaspoon cracked black pepper
- 1/2 teaspoon dried oregano
- 300g can Edgell soya beans, drained
- 12 cherry tomatoes, halved
- 1/4 cup pitted black olives, halved
- 1 small Spanish onion, sliced
- 1 tablespoon chopped fresh basil leaves
- 1 tablespoon balsamic vinegar
- Baby cos lettuce leaves to serve
- Fresh basil leaves to garnish
Directions
Lightly spray bread slices on both sides with oil; place on an oven tray. Sprinkle one side of each bread slice with pepper and oregano.
Cook in a moderate oven, 180C for about 8 minutes or until lightly browned and crisp.
Combine soya beans, tomato, olives, onion, basil and vinegar in a large bowl, mix well.
Arrange lettuce leaves on a serving plate with bean mixture and toasted bread, garnish with fresh basil leaves.
