Twice baked Potato

Ingredients

  • 2 medium potatoes
  • 1/4 t. Salt
  • 1 small green onion chopped fine
  • 1 T. Butter
  • 1/4 c. Sour cream
  • 1 strip of bacon, cooked crispy and crumbled
  • 2 T. Grated cheddar cheese

Directions

  1. Pierce the potatoes 3 times with a fork and place on paper towels in the microwave
  2. Cook for 6-7 min
  3. Remove and let stand for 5 min
  4. While the potatoes are standing, cook the bacon
  5. Chop green onion and bacon into sm. pieces
  6. Cut each potato in half lengthwise
  7. Gently scoop out the potato and place into mixing bowl
  8. DO NOT DESTROY THE SHELL MADE BY THE SKIN
  9. In the same bowl add butter, salt and sour cream to the potato and mix until smooth
  10. Stir in the onions and bacon
  11. Refill the shells with the mashed potato and cook for 2 min
  12. Remove and let stand for 2 minutes and eat
