Vegan Chocolate Chip Brownies

Ingredients

  • For the overachievers, why not make your own vegan treats? We love this simple recipe for gooey, chocolate chip brownies.
  • Ingredients:
  • 1 cup self-raising flour
  • 1 cup caster sugar
  • ½ cup cocoa powder
  • 1/2 tsp salt
  • 1 cup plant-based milk
  • 1 tsp vanilla extract
  • 7 tbsp vegetable oil
  • 2 cups dark chocolate chips
  • ½ cup chopped walnuts (optional)
  • Method:
  • Heat oven to 400F, grease a medium-sized baking tray and add parchment paper.
  • In a large mixing bowl, sift in the sugar, flour, cocoa powder, and salt.
  • Then, combine the plant-based milk, vanilla extract, and vegetable oil in a liquid measuring cup or medium-sized bowl.
  • Next, carefully add the liquid ingredients to the dry ingredients in the first mixing bowl and stir together until you’ve created a smooth batter.
  • Stir in the chocolate chips.
  • Add the batter to the baking tray and spread evenly - if you like, you can sprinkle the optional walnuts on top.
  • Bake for about 25 minutes, leave to cool, cut into squares, and enjoy!
