Vegan Spaghetti & Meatballs

• INGREDIENTS SERVES: 4
• • 15-20 plant-based meatballs
• • 2 tbsp olive oil
• • 1 onion, finely sliced
• • 2 garlic cloves, thinly sliced
• • ½ tsp of chilli flakes
• • 2 tbsp of tomato paste
• • 2x 14.5oz cans chopped
• tomatoes
• • ½ cup of fresh basil chopped
• • 1 tbsp dried oregano
• • spagetti pasta to serve

• METHOD
• 1. Heat the olive oil in a saucepan, then add the onion and fry for five
• to ten minutes or until the onion has softened.
• 2. Add the garlic and chilli flakes and fry for a further two minutes.
• 3. Stir in the chopped tomatoes and tomato paste, then simmer on a
• low heat for 20 minutes.
• 4. Meanwhile, cook your chosen plant-based meatballs according to
• the packet instructions.
• 5. When the sauce has simmered for twenty minutes, stir in the
• cooked plant-based meatballs and serve with a pasta of your
• choice. Season to taste with salt and pepper.
