Vegetable Dumplings

Ingredients

  • For the dough:
  • 4 cups all purpose flour
  • 2 cups water
  • For the filling:
  • 2 cups chopped Chinese chives
  • 1/2 package bean curd, preferably five-spice marinated (2 large squares, 8 ounces, or 1 cup chopped)
  • 1 cup minced shiitake mushrooms (either use soaked dry mushrooms or sauteed fresh mushrooms)
  • 1 egg
  • 1 teaspoon salt
  • 1 tablespoon toasted sesame oil
  • For the dipping sauce, mix the following together:
  • 3 tablespoons soy sauce
  • 2 tablespoons dark rice vinegar
  • 1 tablespoon toasted sesame oil
  • dash sugar
  • grated ginger (optional)
