Vegetable Oats Soup

Ingredients

  • •1/2 cup chopped French beans
  • •1/2 cup chopped carrot
  • •1 1/2 cup chopped spinach
  • •1/2 cup rolled oats
  • •5 pcs shallots (or 1/2 onion)
  • •3 cloves garlic
  • •2 green chillies
  • •small pc ginger
  • •8-9 pepper corns
  • •3 cardamoms
  • •3-4 cinnamon sticks
  • •3 cloves
  • •salt to taste
  • •water
  • *Variations*
  • You can use your choice of veggies like sweet potatoes, broccoli, cowpea beans, mushrooms etc.
  • Also, seasonal available leaves like amaranth, pakchoy etc can be used.
  • Whole quinoa can be used in the place of oats.

Directions

  1. 1) Prepare the Dry Masala
  2. Take pepper corns, cardamoms, cinnamon and cloves and grind together to powder it coarsely.
  3. 2) Prepare the wet masala
  4. Coarsely crush shallots, green chilly, garlic cloves and ginger
  5. 3) Add rolled oats to a preheated pan and roast it on slow flame for 1 minute.
  6. 4) Add the dry masala and roast it for a few seconds.
  7. 5) Add the wet masala and again saute it for a few seconds.
  8. 6) Add the chopped vegetables and spinach and mix it well.
  9. 7) Now add 2-3 cups of water, salt as per taste alongwith pinch of turmeric.
  10. 8) Cover it and cook it on a medium flame for 8-10 mins.
  11. 9) Keep checking in between to ensure that oats are cooked well.
  12. *Note*
  13. Oats when cooked get little thicker so adjust the water accordingly
  14. Serve it in a bowl and enjoy the wholesome nourishing vegetable oats soup😋
