Vegetable Pasta Soup

Ingredients

  • 8 cups vegetable broth
  • 8 baby Bella mushroom chipped
  • 4 celery ribs chopped
  • 1 onion chopped
  • 4 carrots chopped
  • 1 cup Brussels sprouts quartered
  • 2 tsp herbs de Provence
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 cups (dry) organic ditalini pasta

Directions

  1. Chop all the vegetables. Sauté the onion and celery till soft, add carrots and Brussels sprouts cook till soft, then add mushrooms. Add herbs, bay leaves, salt&pepper. Add 4 cup broth. Let simmer 1 hour. Bring to boil then add noodles. When noodles done add remaining broth and remove from heat. Serve hot, add salt if needed. Store extra servings in freezer containers
