  1. Melt butter over medium heat
  2. Add shallot and sweat
  3. Add wine and reduce by 1/3
  4. Add stock and reduce by 1/3
  5. Add cream and reduce by 1/3
  6. Add beurre manie and boil to get consistency desired
  7. Salt and pepper to taste
  8. Add some chives or parley (optional)
